I made this baked salmon croquettes the beginning of this week and I blew even myself away by how good and versatile they were! They’re:
Plus, I used salmon “burger,” so I got the coveted, rich and silky flavor of wild, Copper-River King salmon at a fraction of the price that a big slice would be. Salmon burger is simply the small pieces left over that were too close to the bones for the fishmongers to filet in the biggers pieces.
If you have a local fishmonger, it’s worth seeing if they’ve got this available, so you can get all the health and flavor benefits of wild salmon without the fancy-dinner-party price! (But if you can’t find salmon “burger,” you can certainly substitute wild, sustainably caught canned salmon in these croquettes! Just make sure to keep an eye on them while cooking because they won’t need as long in the oven and could dry out much faster!)
(makes about 8 croquettes*)
½ cippolini onion (sub: ½ regular white or yellow onion)
½ lb wild-caught salmon burger
1 egg, preferably pasture-raised
⅔-¾ C almond flour
2 tbsp shredded fresh basil leaves
2 tbsp finely chopped fresh parsley
1 tbsp finely chopped fresh dill
2 tbsp avocado oil mayonnaise (I like this one!)
1 tbsp lemon juice
1 tbsp grainy mustard
1 tsp honey
1 tsp finely ground pepper
1 tsp sea salt
avocado oil spray
*I’m a single gal, so if you’re cooking for many, you might want to double or triple this recipe if you want to have some leftover and stocked for lunches all week long in the fridge!
The croquettes, once cooled, will keep in the fridge 4-5 days stored in an airtight glass container.
